Tainan, Shimu Fish As known to many as Seaweed Fish, Guoshing Fish, Shimu Fish is actually the Milkfish that can grow up to 50cm in length and feed on algae at the pond bottom. Shimu Fish is cultured in traditional shallow water ponds and is less tolerant to the cold. Most Shimu Fish are raised in the southern Taiwan (south from Yunlin) and Tainan is even known as the hometown to Shimu Fish. With a peak season from May to November, Shimu Fish is rich in protein and is the most traditional delicacy in Taiwan.
